Fresh Bread: Pretty, but Blah

Pretty to look at, but blah on the taste buds. Any suggestions for fail-proof bread recipes? I’m trying one from Laurie Colwin next.

What recipe did you use for those?

My favorite bread ever is the oatmeal buttermilk bread but you really really need a stand mixer because its a high hydration dough that sticks to evveerryything! Kneading it by hand = sticky nightmare.

    Challah is delicious!! http://seddy5.typepad.com/blog/2010/12/challah.html

I also like this bread from smitten kitchen (the recipe is from one of my favorite bread books) http://smittenkitchen.com/2009/01/light-wheat-bread/

By far, the BEST and EASIEST bread I’ve ever made was from the book ‘Artisan Bread in 5 Minutes a Day’. A link to the basic recipe is here: http://www.artisanbreadinfive.com/2010/02/09/back-to-basics-tips-and-techniques-to-create-a-great-loaf-in-5-minutes-a-day

The general idea is that you mix up a huge batch of dough, refrigerate it, and use it within two weeks. I love it because I can bake as much at a time as I want. Very flexible and the bread is AMAZING!

    Happy baking!

Thank you! I have that book but got confused about yeast. I may be emailing you with questions!
