Watermelon and Goat Cheese Salad

Last weekend we hosted a BBQ for my cousins, and naturally I wanted to impress with a wide array of salads and sides, not to mention my homemade chocolate ice cream.

This salad is inspired by a recipe from the Food52 community. While I didn’t make the dressing – mixing up a pitcher of margaritas took priority over finishing the salad – it was a great salad nonetheless. Crisp juicy watermelon, creamy goat cheese and salty pistachios plus some mint from my container garden worked together as only summer produce can. It’s not really a recipe as much as an assembly.
