For me, Father’s Day has always meant cooking outside. A grilled steak, a cold beer, crisp tortilla chips dipped into spicy salsa, and chocolate. Definitely chocolate. I suppose some greens are in order, to round out the decadence of the rest of the menu. And maybe some of Gwyneth Paltrow’s baked fries if I’m feeling up to the challenge.
This year we’re starting with this cilantro-buttermilk grilled skirt steak, a new-found recipe that’s already a household favorite.
As the charcoal grill warms up, we’ll dip into this creamy cottage cheese guacamole dip, which has been making the rounds to end-of-year parties and last-minute beach get-togethers with great success.
Next, this raspberry arugula salad comes to the rescue to balance everything out.
And if enough “please, Mommy!” crosses my path, I’ll probably be convinced to whip up these baked fries from Gwyneth Paltrow.
Finally, we’ll end the night with a gluten-free version of these M&M blondies.
