I’m back with another cookbook review! The Healthy Mind Cookbook by Rebecca Katz is definitely a book you’ll want to add to your collection. Not only are the recipes healthy and easy to make, but they’re packed with flavor!
Typically I’ll glance through a new cookbook and think, eh, there’s maybe a handful of recipes I want to try. Not this time. EVERYTHING looks good! From the Sicilian Chicken Soup to the Provencal Seafood Stew, not to mention the gorgeous (and aptly named) Bejeweled Forbidden Rice Salad … and every recipe comes with a headnote that explains the health and mind benefits of each dish.
Whether you’re just getting started in the kitchen, or you’re an experienced home cook looking for ideas to shake up your weekly routine, “The Heathy Mind Cookbook” is like having a personal chef in your kitchen.
Rebecca Katz is a nationally recognized chef and nutrition expert, well known for her previous books, including The Cancer-Fighting Kitchen and The Longevity Kitchen. What I like about Rebecca’s approach is she doesn’t give us the standard “what’s in my pantry” filler. Instead, she devotes an entire chapter to “building mind-blowing taste and flavor,” which includes a section on FASS (fat, acid, salt and sweet, the secret to making any dish go from good to great).
Chapter 8, Dollops, is another winner. Here you’ll find her favorite recipes for vinaigrettes, dressings and sauces, including Lemon Tahini Dressing, Minted Chimichurri, and Yogurt Tahini Raita. She’s even got suggested recipe pairings which I love (so often, a book includes sauces and marinades, but doesn’t tell you what to do with them).
